Süßholz: Wunderwurzel mit Allroundtalent
Die Süßholzwurzel hat es geschafft, sie ist zur “Arzneipflanze des Jahres” gekürt worden. Tatsächlich hat das Gewächs als Naturmedizin vor allem bei Erkältungen sowie Magen- und Darmbeschwerden nachgewiesenermaßen wirksame Qualitäten. Ein weiterer Vorteil von Süßholz: Die Wurzeln werden zum größten Teil wild gesammelt und wachsen ohne Dünger oder Pflanzenschutzmittel. Süßholz hat also Bio-Qualität. Aber Süßholz kann auch kulinarisch punkten – und das keineswegs nur als Süßigkeit.
Was Süßholz so heilsam macht
So unscheinbar sie aussehen – Süßholzwurzeln haben es in sich. Rund 400 verschiedene Inhaltsstoffe wurden bis heute in Süßholz entdeckt, allen voran Glycyrrhizin und Glycyrrhizinsäure. Dieser Stoff im Süßholz hemmt den Abbau von körpereigenem Cortison und wirkt auf diese Weise gegen Entzündungen. Allerdings kann diese Wirkung auch unliebsame Folgen haben: Schwangere, Menschen mit Bluthochdruck, Diabetes oder eingeschränkter Nierenfunktion dürfen Süßholz darum nicht einnehmen. Auch wer Digitalis-Präparate, Cortison oder entwässernde Mittel (Diuretika) nimmt, sollte die Süßholzwurzel nur in Rücksprache mit dem Arzt anwenden. Bei allen anderen gilt: Süßholz ist ein gutes Mittel gegen zuviel Magensäure und Bauchkrämpfe, hilft bei Husten und Schnupfen und hemmt nachweislich das Wachstum von Bakterien, Viren und Pilzen. Neuere Studien lassen sogar vermuten, dass Süßholz selbst bei schweren Erkrankungen wie Hepatitis A und C heilsam wirkt. Endgültig erforscht ist diese Wirkung allerdings bisher nicht.
Was Süßholz so beliebt macht
Fest steht aber, dass Süßholz seinem Namen alle Ehre macht: Glycyrrhizin hat etwa 50 Mal so viel Süßkraft wie Zucker, und das fast kalorienfrei und ganz ohne Fett. Kein Wunder also, dass der eingedickte schwarze Saft der Süßholzwurzel – gut bekannt als „Lakritz“ – seit Generationen buchstäblich in aller Munde ist: Lakritze schmeckt intensiv süß und ähnlich wie Anis. Aber auch die getrocknete Wurzel selbst taugt als Ersatz für kalorienreiche Süßigkeiten. Ganz clevere Naschkatzen kauen Süßholz einfach so lange, bis es weich wird und den Geschmack verliert – ganz ähnlich also wie beim Kaugummi. Es soll sogar Leute geben, die sich mit dem Kauen von Süßholz das Rauchen erfolgreich abgewöhnt haben. In Italien zum Beispiel stieg der Verkauf von Süßholz nach dem allgemeinen Rauchverbot sprunghaft an, weil sich viele am Glimmstängel hängende Italiener die Wurzel als Zigarettenersatz besorgten.
Was Süßholz kulinarisch alles kann
Rund 500 Tonnen Süßholz kommen jährlich zu uns, meist aus dem Mittelmeerraum importiert. Ein großer Teil davon wandert in Heil- und Genussteemischungen, in Kräuterliköre und in die Süßigkeitenproduktion. Aber auch in vielen Sterne-Restaurants steht Süßholz inzwischen im Gewürzregal, denn man kann mit der Wurzel auch wunderbar kochen. Besonders praktisch ist Pulver aus Süßholz, das man zum Beispiel im Internet bekommt, denn es lässt sich gut dosieren. Schon 1 bis 2 Teelöffel davon genügen, um Saucen, Risotto, Salatdressings, Schmorgerichten, herzhaften Füllungen oder Desserts eine feine Lakritznote zu geben.
Wer mag, kann aber auch einfach ganze, getrocknete Süßholzwurzeln in der Apotheke oder im Reformhaus kaufen und dann je nach Bedarf zerkleinern. Am besten ist natürlich Süßholz raspeln, und das im wahrsten Sinn des Wortes, nämlich auf der Küchenreibe. Kocht man – zum Beispiel in einer Suppe – die ganze Süßholzwurzel mit, muss man sie natürlich vor dem Servieren herausnehmen. Die ganzen Wurzeln lassen sich übrigens auch gut beim Braten oder Grillen verwenden: Einfach die Süßholzwurzeln der Länge nach halbieren und die Enden mit einem scharfen Messer etwas „anspitzen“ und Fleisch, Geflügel, Fisch oder Gemüse daraufstecken.
